Western Australia
Stay: Sal Salis Ningaloo Reef

This fantastical art-filled hotel references its Mornington Peninsula surroundings in multiple ways. An awe-inspiring 10,000-lightbulb installation was inspired by the region’s winemaking heritage and the bubbles that form during the fermentation process. Local artists have created other pieces across the property, and the two hatted restaurants on site source as much as possible from producers and growers nearby.
Do: Relax and indulge. Between the incredible food and wine and the world-class art, Jackalope is the place to go for a truly hedonistic escape.
Tasmania
Stay: Kittawa Lodge
